I'm in love with avocados.

Diet Calendar Entry for 18 October 2017:

Strawberries are amazing. I always have a supply in the freezer, and buy baskets when they are in season. Mmm....

Love strawberries, I cook them with lemon, chia seeds and stevia. They make a great jam to put on stuff. It allows me to have desserts. Often I will melt some Lily's dark choclate and cover some home made pound cake with strawberry jam. Fantastic

Diea: Very simple to cook the strawberries fr 10-15 minutes, mash them and add some lemon juice, two tablespoons of chia seeds and stevia extract. (Extract is better than Truvia ) After they cool a bit put in the refrig. It won't get as firm as jam but it has a sweet strawberry taste. For me, it hits the "spot" as if I had some real jam. And, look for Lily's dark chocolate morsels - they are made with stevia too so they have very little carbs. They are fairly new and can be a bit hard to find. And, lastly, search the Web for keto pound cake or best keto bread which to me tastes more like pound cake. I make it every week and I have "dessert" at every meal. Hey, it's not a bearclaw but it does control my sweet tooth. Good Luck

Cool. Thanks! How do you initially cook the strawberries? Do you boil them in water?

Diea:Usually cook on slow heat and no water if they are juicy. It takes a few minutes for them to release their juices. Once they are soft you can mash them with a potato masher. If you want really smooth jam then put in blender or use an immersion blender. All up to your tastes. Add Stevia and lemon to taste. And, chia seeds go a long way so experiment with a tablespoon or two.
