Strangest breakfast ever.

it's one egg, half a zuchini, some sesame seeds and walnuts. Cooked in coconut oil. It actually wasn't bad. It was a combo of dinner and breakfast.

Nothing weird at all! I live in Ohio, grew up on a farm. You needed to eat the veggies from the garden all meals or risk it going to waste.

Isn't coconut oil a saturated fat?

Fat isn't all bad. I'm from Ohio too. But didn't grow up on farm. Used to having some veggies for breakfast but zucchini in the morning is a first.

Coconut oil is very good for you. As well as olive oil. :-)

There are three types of fat; animal fat, vegetable fat and then man made fat. Animal fat is healthy in limited amounts, vegetable fat is really healthy, but man made fat is what kills us and what most processed foods use. Coconut oil improves digestion by helping the body to absorb fat-soluble vitamins, calcium, and magnesium. If coconut oil is taken at the same time as omega-3 fatty acids, it can make them doubly effective. Coconut oil can also help improve bacteria and gut health by destroying bad bacteria and candida.

you are welcome, buckeyechick. I try to have coconut oil once a day for the good it does. got to watch for the bad kinds of oil though. There only added fats I have been using is coconut oil, real butter, and olive oil but I would like to get some avocado oil too. -Judy

Jadsl, if you have a WinCo foods, look for avocado oil there, they sell it in bulk, as well as multiple nut butters that are fresh ground by you from the raw nut. The other aspect of hydrogenated oils are if they come from a protein source, ie. soybeans, when the heat is added to the to hydrogenate them that whips them up and turns them into that lovely fake Crisco lard or margarine we all know and love? The natural protein molecules also produce more of their natural counterpart MSG or Monosodium Glutamate which naturally occurs when you heat ANY protein, but guess what happens when you hydrogenate a protein and THEN heat it? LOL Yep, even more! It's a "flavor enhancer" to our taste buds." But in the quantities our food industry has added it to things once they discovered that, it has acted as a poison to some people's central nervous systems and brings on migraines, and asthma attacks to name the two I'm aware of.
