Good morning all,
Well after researching many low carb food plans - I've settle on Keto. Reviewing meal planning and foods, I think that is the best way for me and hubby to go. I do not like coconut, so that oil - yuck! Same thing with Almond Milk - more yuck! Friends that like Almond milk tell me to give it a chance, it "will grow on you". My thought, don't want anything growing on me!! lol I've got to find stuff I like or I'll never stick to a plan. So, for the last 3 days I've made recipes from Diet Doctor Keto plan, let me tell you Slaw Crack is the lowest carb and best thing I've ever eaten!! The recipes are all basically 1 pot meals, which is good. There are some days where I think if I see another pot or pan I'll scream! :-) Well, got to get to work. Everyone have a good and healthy day!!!

Refined coconut oil doesn't have taste or smell...

I disagree. We have Trader Joe's Coconut oil now (not as bad as some) and have tried other brands. It does have a different taste - my husband uses it all the time and I can tell when he tries to fries my eggs in it.

Not all oil is for everyone. I don't love the taste of certain olive oils but other people can use them all day long. There are a ton of other healthy fats, just find some you like. (I use coconut/almond milk blend and it still sucks but I still keep trying) I need to pick up more but now I use heavy cream diluted with water in place of creamer in my coffee.

The Obesity Code by Dr. Jason Fung is a great resource.

Good choice to go Keto (LCHF)! There are coconut oils that are more refined but not bad for you and that have no taste. The MCT oils that can be pulled out of it are very good for you and bypass your digestive tract and go directly into energy. Good luck on this!

Maybe I'm just used to it but I accidentally bought refined instead of unrefined and wondered where the "flavor" was...

Try the Califia Farms Toasted Coconut Almond Milk. Better than others by a mile.

Rckc, the taste primarily comes from the Lauric Acid (C-12) which is 90% of coconut oil. The rest is mainly C-8 and C-10 oils which are the star performers that give you energy and suppressed hunger. Mae, cooking with coconut oil takes most of the taste away, but no matter what, I don't like eggs cooked/fried in it...nothing can take the place of butter for that. Thankfully, butter is very Keto friendly.

Exactly Rckc!! Most times I'm sure he sneaks it in and I don't notice, but not my eggs

Have you tried any cauliflower recipes? I made breadsticks and fried rice out of cauliflower and it was very tasty!! There's a bunch of other options for low carb meals

There are a lot of different oils you could use. Or get your fat from actual food

I love spectrum brand unrefined coconut oil and even that has a very mild scent or flavor

Thanks for the info about crack slaw Mae! I bought a head of cabbage a while ago and was wondering what the heck to do with it. All those cabage recipes on diet doctor look great. I'll try one tonight.

I'm on keto, too. Just started and I'm loving it. I'm also Epileptic, so that's a bonus, too. This is technically my 3rd day and I'm already down a pound and a half and I really don't feel like I'm missing all that much. I'm not a bread eater nor a sweet eater, so it's just been a few adjustments for me. I really like it, so far. I hope you have great success.
