Wow, you know it is not easy to make a salad that contains over 1,000 calories, but when you do manage it...good god that is a lotta damn food!!!!

IMy favorite is sunflower seeds in my salad. Seems to have a bit different than most other nuts, although I like most of the other nuts, too.

mixed nuts for starters, 3 hard boiled eggs, avocado, chicken, cucumber, lettuce tomato, cheese, dressing....by the time I had it all measured out and piled in a huge bowl I was like, no way I can eat all of that. I think I burned 300 calories just chewing!

LOL CC that is all I ate yesterday, being on IF and having a 4 hour eating window, I don't have to worry about saving any calories for the rest of the day because I don't eat. My issue is cramming all of the calories I need into a 4 hour window :) Mom it was a big arsed salad and I thought I was never gonna eat it all. Pandasmom I love sunflower seeds in my salads too and usually that gives me a nice fat boost without all of the bulk, but running out of stuff right now, this weekend I need to do some shopping and I'm hoping I am still interested in food when I walk into the store, maybe this time I will actually bring stuff home instead of going....nah, I don't feel like that this week...

I feel you, Deb. it's delicious, but HUGE. I add blue cheese crumbles, avocado, walnuts, and salmon to mine. I am doing well on an 18:6 IF and eat twice, so my salad is usually around 600+ calories. But I love all the healthy choices you are making in your salad fixings. :)

Laura, I usually have mushrooms, olives and sunflower seeds and vinegar and oil dressing (heavy on the oil) added to the other ingredients , those are higher fat options that make the salad more compact and quicker to chew, when you are out of the higher fat options you have to add a LOT more bulk to meet your calorie needs, my refrigerator is nearly empty tonight, I will go shopping tomorrow. I don't leave the house after dark, hate driving at night, too many deer hanging out in the streets. I have no idea what I am going to fix tonight. I had some mixed nuts, maybe I will leave it at that, I'm tired this evening.

Hi Debra! Yep I have Kirkland Cashew Clusters from Costco at the top of my list. They are so good. Cashews, Pumpkin Seeds, and Almonds, cut in small squares, held together with some kind of syrup. I liked shelled pistachios also, and since I have been eating these, I seem to not worry about calories. Good luck on your diet.
