Really splurged on breakfast today. I tried out buckwheat waffles a few months ago, using the waffle iron I have, and they didn't really come out right: They were overly crisp and sort of greasy. In the meantime, I got the waffle plates for my Cuisinart Griddler, so I decided to try it again. This time, I added some extra buckwheat flour, to try to balance off the butter in the recipe. This time around, they came out a bit doughy, because the Griddler cooks quite differently than the waffle iron I have. So I started researching buckwheat waffle recipes again, and I found that nearly all the recipes except the one I'm using have a lot more baking powder, and also, most use oil instead of butter, which has the added benefit of eliminating the wallup of cholesterol that my recipe has. I did learn from this second experiment that these waffles really do substitute for bread -- in fact even my doughy ones seem to me much better than the gluten free bread I've had. There are ways to make the recipe more savory also, so next time I want a treat for breakfast, I'm going to try making a ham and melted swiss sandwich using the waffles I have in the fridge. But when I use up the ones in the freezer, I'm going to try to make the next batch with oil, and also by separating the eggs, and whipping the egg whites and folding them into the batter. I think that approach will get rid of the doughyness. It'll be a while though -- even without the cholesterol, these waffles are a lot of calories and carbs and are definitely not an every day item!

If you separate the eggs and whip the whites you will find a much fluffier texture - I do that on so many recipes - even dessert recipes.

This is like a cooking class. Love it! I made Hermoines Mom's buckwheat pancakes and they are just awesome! :) The only waffles I have ever made were from a King Arthur's Flour mix. Those things were the bomb! Definitely a once in a while treat. High carbs, sugar, etc, etc.
