Yum found some super fresh Red Snapper at the the market today!

Can tell from your journal - you are a real "foodie" And I mean that in a good way. I'm like smerrill - need to eat more fish but never quite know what to do with it.

Think you have made quite a few of us "drool"...fresh fish and snapper at that. I love seafood...all of it! We used to live on the Gulf Coast and ate our fill of fresh fish. Now, we live in West Texas not near a drop of water...so we go to the coast a couple of times a year and stock up. Enjoy it for all of us....

lol wow I should journal about my market finds more often. I live in AZ soo u can imagine my delight at the find (wild caught as well!). They must have flown it in or shipped it express from Mexico. I kept it pretty straight forward because of its supberg condition. I considered sashimi but decided to do a quick grill over some mesquite wood with a little kosher salt, cracked pepper and just a bit of fresh lemon. I really didnt want to over season it and "loose the fish" so to speak. It was YUM! Mesquite wood makes all the difference.
