Sherran's Journal, 17 November 2015

After the report on processed meat and the potential problems of most meat except chicken, I began to reassess my following the Atkins diet. While I ate very little processed meats in general, I did eat bacon almost daily. I don't think my meat eating will radically change but I began to see that i might be better served if I tried to balance my foods and began increasing my carb intake by adding whole grain bread, oatmeal and a wider variety of fruit while trying to hold my calorie consumption to between 1200-1300 per day. ( some walking too but not the primary focus). In making this change I was prepared to gain some weight during the transition and have managed to keep this gain within 2 lb which has gone back and forth but I seem now to be on the losing side even if very slowly. I will say that the increased carb load has brought back cravings and hunger with a vengeance! Atkins is right about that, I was never hungry when following the program. I lost control a couple of times in the last 2 weeks but let it run its course and as I've said have held to that 2 lb fluctuation. Hope I've stabilized as I go forward.

Good luck with your transition. I still eat bacon but buy it Uncured and chemical free at Whole Foods.

Know that the quality of the carbs you intake will affect your cravings. Any bread is still processed, meaning your body does not have to process it as much, meaning it converts to glucose faster, meaning you will have a larger insulin spike, meaning you will have a corresponding sugar drop and change in leptin hormone level... which triggers hunger/cravings. Being a former Atkins follower, I know the cravings you are dealing with. I now consume 250-350 grams of carbs per day with no cravings, as long as I chose clean carbs (minimally processed) and don't eat them all at one setting :0).
