Slow and lazy Sunday. Going out to tackle a bunch of tomatoes and peppers piling up on my counter. Dinner will be good.

I'd love some more tomatoes; weather's been too hot to let them produce any more right now. Keeping our fingers crossed for a fall crop, but the plants aren't looking too good.

Pamela - For dinner I had a beef & pepper stir fry. For the tomatoes, I cooked them down with a little onion and garlic. Some of that went into the crock pot this morning (making Swiss Steak) and some will be frozen. Can't tell you how good my kitchen smells!

Mmmm nothing better than home grown veggies. I'm still learning with this, but yesterday pulled some really impressive beetroot and next month we are going to have an abundance of apples - any low calorie ideas for cooking apples? All I can think of is apple pie, apple pie and a bit of apple pie on the side :)

Tracy - Love fresh beets - I cannot grow them because the rabbits chew the greens down to the dirt. Have you ever tried beets raw? They have a sweet taste like carrots. As for apples - why not eat them raw? When eaten with the skin, fresh apples are low glycemic and have high fiber - in other words, you are not going to retain many of the calories you eat.

Buffy - I haven't tried them raw and now that I am reading this I realise I was supposed to cook them tonight - oh well tomorrow is another day - I'll blame in on the blood loss (I donated this evening). We have two apple trees, one type is for eating and the other is for cooking (a bit bitter to eat uncooked).

Gently cooked sliced apples with some sugar substitute - add cinnamon if you like it...let them cool. Buy some frozen filo pastry, take a couple of squares, (you can use just one, but I don't think it will be strong enough) place some of the cooked apples in line in the middle of pastry and roll up like a cigar. Brush with little melted butter of spray light, bake in hot oven.. (look at fill instructions for temp). Although it's pastry,... Fill is so thin it's lower in calories... Serve with low fat Greek yoghurt - maybe a squeeze of honey.

Or... How about baked apple... Take core out of centre and fill with sultanas. Bit of sugar... Maybe some spice eg cinnamon, spry with spray light or rub little butter around and bake in oven (you can score round spoke too, to allow it to oook)..... I wonder if a mix of sultanas and bran or nuts would work as a stuffing
