Today is a good day to get some cooking done and pay attention to hitting my nutritional goals. Have been a little short on protein, a lot short on veggies and way too much dairy. Time to nip that in the bud.

Especially if you have a cold weekend, good time to be inside and warm up the house cooking. It helps me to have a few things done ahead. I'm not cooking the weekend it's more use up things in the frig and freezer this week.

Herbie - I roasted some chicken breast in the oven, cooked brown rice, cauliflower and green beans. The leftovers will be recycled in a stir fry tomorrow.

I do the bulk of my cooking/making stuff on Sundays for the week. Prep all my fruit veggies, bake a couple loaves of bread, make yogurt, 2 or 3 entrees, make up beans, etc. Then during the week I can just throw stuff together quick. I find it so much easier to do a bunch at once versus a bit here and there. Plus I always have some healthy to eat.

Buffy, I'm so happy you are back. I've been concerned about you. I knew you were struggling. Good job pre-cooking for the week. Honestly, I have too much frozen and need to start using it. Good day for me went for a walk in the February warm up before we get slammed with more cold, it felt really good.
