Been experimenting with some new foods. My wife has, at least, and I've been eating them. One very tasty recipe is made with zucchini, marinara sauce, mushrooms, tomato, chives, olives, and topped with Parmesan cheese. She calls them "Zucchini Boats." Delicious, and it's even vegetarian (leave off the Parmesan if you're vegan.

Also got a new recipe from my Daughter-in-law, prepared by my wife, for meatless/cheese-less lasagna. It uses thinly sliced zucchini and eggplant for the noodles and ground cashews and nutritional yeast for the ricotta cheese. Very tasty and very filling. Carbs for both these dishes is very reasonable at ~12g for a nice sized serving.

Love them both. I fix them except for the ground cashews and yeast. I use cottage cheese.
