ShyGuy's Journal, 27 February 2014

As March approaches, and hopefully some relief from this brutal, Winter, weather we've been experiencing, some familiar, and tasty treats are coming to mind. With St. Patricks Day, coming in the next week or so, it's time again for some corned beef and cabbage. The price of beef has gone up, as of late, but with St. Patrick's Day, I'm hoping the price of corned beef will go down for a few weeks; so time to stock up. I don't know about the rest of you, but corned beef and cabbage has always been one of my favorite meals, however, bucking tradition, I prefer to have fried cabbage rather than boiled. Eastern Market, near Downtown Detroit, has some of the best corned beef in the country, so that's where I'll be heading for mine. :-)

I love corned beef and cabbage, but I like boiled or steamed cabbage. Unfortunately my family hates corned beef and cabbage, so it's been out of my diet for a few years. I wonder if I can just make a single serving? Now you have me hungry! :)

Yes, there are usually some great sales. I boil mine first to remove some of the nitrates. Can't wait for March 17th!

Some of the Supermarket corned beefs are small enough that, once they are done, only yield 3 or 4 servings. Get one of those, and then use some of the cooking liquid to cook a small head of cabbage, along with a couple of carrots, and a potato. That's a good way to get your corned beef and cabbage fix, and you can still cook something else for your family; don't deprive yourself. LOL :-)
