I also had low carb lasagne and two slice of Atkins bread today to round out my foods for the day. How does everyone else record food that comes from a recipe you make?

Low carb lasagne? Really? If you don't mind, what do you use to replace the pasta? I would love to see your recipe. I love (LOVE) Italian food.

Me too!!! I would love to be able to make a low carb lasagna. I already use spaghetti squash for low carb spaghetti, but I would sure love me some lasagna! Then if I could just find a substitute for bread.....

Is eggplant low carb? I saw Rachel Ray use thin slices of eggplant one time in place of the pasta in lasagne.

Sorry for the delay. The low carb lasagne is a recipe from the Low Carb cookbook by George Stella. I made some adjustments to my taste, but basically it's lasagne without the noodles...i.e. meat sauce and wonderful ricotta, mozarella, parm cheese topping. I like it a lot and usually freeze leftovers for lunch.
