Penlan's Journal, 11 September 2019

I have chickens, free ranging out on grass. Rescue ex organic commercial brown jobs. They have not stopped laying for a summer moult, neither have the old grey ones. Odd. and their eggs are normal to me but apparently extra large.... around 60g to 70g each. Good job I weigh them for the diary or I would be way off. Still getting 6 or 7 eggs every day from 10 old girls. Not bed eh.

you make a few quiches. then when they are cold cut them into portions and freeze them. lots of lunches or dinners taken care of 😊

No point making quiches, I can't tolerate grains, in any form or quantity. Or seeds, or pulses..... Thanks for the suggestion though. I keep a plate of HBE in the fridge for a perfect snack/meal. I made the most amazing lemon curd for my son earlier in the year, the Spring glut. Thinking of making pickled eggses for winter, used to do that years ago. Wonder what they would be like pickled in Balsamic... The eggs on their own keep for months in the fridge. Oldest eggs I ate were year old plus duck eggs. They were very good. Sadly I no longer have duckies. Muscovy, the boys made wonderful Barbary (sp?) duck.

Crustless quiche is still very nice. And lower in fat that with pastry etc. 😊

Crustless quiche, with no onion or other veg, yeah I make that but call it baked savoury custard. Not looking for low vat in my diet, I add double cream and use just the yolks in whole milk. Then I have a bowl of egg white I do not know what to do with!! Never tried egg white omelette, might have to do that today, I have five whites from making a custard the other day.....

Meringue? No way! Even a teeny bit of sugar locks up my joints..... Hmm, can one bake whipped egg whites without the sugar... a savoury meringue? Doubtful!

I have eaten the eggs raw, wonder what it would be like to just drink the whites raw ... a bit snotty ai guess. Or cooked soft so they are still like milk. That is my favourite way to do a soft boiled egg, it is like the best egg custard without the sugar. Salty yumminess. Eggs are surprisingly salty in their natural state. I love my eggses. :)

Gillyfizzy suggests I keep an eye on my cholesterol level. I do, it is nice and high.
