I haven't stabbed anyone with a spork. I'm so proud of myself. It does help that the last little bit of weight I lost seems to have been in my face. At least that's what 3 people have told me. They were giving me work to do when they told me though. Compliment.. oh and can you? It's an effective work tactic. I need to start using it!

Dinner is going to be meatloaf. It's one meal that takes long enough to make that I can throw it in the oven and it's done by the time I'm done milking.. unless of course something goes wrong which it often does. Then the meatloaf looks like a giant turd. This is why the family insists on having giant containers of ketchup and bbq sauce. Can I really go two nights in a row with edible meals? Is it possible? If I do it I might actually get a makeout session with meatloaf breath. Ok.. maybe I don't want to be rewarded for successfully cooking an edible meal. Now all I have to do is figure out what to do for the rest of the week.

How do you make low carb meatloaf? My mom always put in a bunch of bread which I thought was the key to making it loaf-like and not just a pan of browned ground beef.

I'm the opposite and need it to cook faster so I make it in muffin pans. Works great! Haven't made it in forever but my son will eat it now so looks like it will hit the rotation. Ok so you did th ebuffalo chicken. You know you can do the same thing to make pulled pork right? (Sometimes I "pull" it and other times not) I bought a pork roast and a beef roast this weekend. I have pork and chicken down, next is beef with veggies and not having the potatoes come out like mush. There you go, with a roast and a crockpot you have 3 edible meals that take almost no prep and work into what you are trying to do! Tell the hubby he's welcome!

Oh and pulled pork? Just take yours out before adding the sauce if you want. But I just go light on sauce, they can add more after if they want. it balances out with all that protein!

My low carb meatloaf if usually 1 part pork sausage to 2 parts ground beef and an egg or two to keep it all together. Then I season it with whatever I have in the house. It's a little heavier than normal meatloaf but no one in the house seems to notice. Then again.. they're just happy when I don't burn it.
