I’ve been smoking brisket, pork belly and Mac and cheese for dinner orders this week. Brisket is probably the best I’ve made to date. Enjoy!

In Texas, you measure the quality of restaurant by their smoked brisket. In many other States, if you go to a BBQ place and ask for brisket, they look at you like you're from another planet. They have no idea what you're talking about.

Thanks Everyone! It was a great cook. Brisket is King and I judge BBQ places by their brisket. It’s the only thing I order most of the time (and a beer).
