Gorgeous sunny day, kind of cool but the sun is definitely warm! Walked 3.5 miles today; 2.8 with doggies. A bit more mileage due to planned day off tomorrow.

I rechecked the posted recipe for the Vanilla Pecan Protein Bars and there's nothing missing. I even went back to the original recipe, on which this one is based, and the only thing that was changed from the original is that 1 oz. of cream cheese was substituted for 1 oz. of sugar free low carb chocolate chips. That's it. The original recipe advises one to knead the batter well before putting it into the pan. I did not do that, as that instruction was not in the tweeked recipe. However, I thought I mixed it up pretty well, so I can't believe that the absence of kneading is the reason it didn't set up. Anyway, I can't see myself making these again, as they're just too gooey and not anything like a real protein "bar."

Oh what a bummer!!! Wonder if the creamed cheese did something to the recipe? Maybe it would set up better without it? But did it taste good? Hope you are having a great weekend! Great job with the walk!

Stef, the "bars" are pretty good tasting, if you like eating something that tastes like cookie dough! But as a take along protein bar to substitute for Atkins bars, well, it fails on that account. Anyway, between DH and myself, we'll have ourselves a smaller portion every day and get it eaten up over these next few days. The walk was pretty good, but my thighs can tell I added that extra .2 miles! LOL! Hope everyone likes the Valentines tomorrow.
