My sister gave me a huge zucchini to use. However, I've never really used this vegetable much before and don't have any recipes. The zucchini must weigh around 3 lbs, it's big. Does anyone have any suggestions?

cut it up. dip it in milk and dredge in cornmeal. Fry it up. Or you can put it on a cookie sheet and spray with cooking spray and bake at 375 until done usually 15-20 minutes

Yep, I slice it and put on cookie sheet with olive oil or spray butter and then grated parmesan with some garlic powder. Very quick and so yummy! Thinner slices will get crispier.

I agree with the above. Or you can slice it, put it in a baggie with olive oil and a veggie spice, and let it sit for a while, then grill the slices until they are tender. Yummy!! You can also make zucchini bread or chocolate zucchini bars. I love zucchini!!

Google Low Fat Zuchinni muffuns! Throw in a handful of chocolate chips! yum!

I make long strips by using a potato peeler. Put a couple of tablespoons of chicken broth in a frying pan, add the zucchini "noodles" then stir fry for 3 or 4 minutes. Move the noodles over the side of the pan and add 2 teaspoons of cream cheese, turn the heat down to low, stir with the chicken broth till melted. Sprinkle in some garlic powder then toss the noodles until well mixed.

You can also dice zucchini making about 2 cups in total, add 1/2 cup diced tomato, 4 smashed garlic cloves, a splash of olive oil, basil, salt and pepper. Either make a package in tin foil or just use a pot or frying pan cooking till tender. Top with grated Parmesan cheese.
