Thanks Laurie and Stef for your encouragement on my last weigh-in entry.

Yesterday was a cold, heavy rain day; at least it was cold for us. Today not much better although no rain just yet. I did not walk at all yesterday and didn't hop on the Stairmaster either. But I tried to make up for it by doing a LOT of restocking at the thrift store. No rolling racks to use, just hoist up all the clothes and walk 'em out, load after load. Repeat for a couple of hours and I put in some mileage.

Today, I got the dogs out and got 3.3 miles in.

On Tuesday night, I made Pumpkin Chili again. It was perfect for this cooler weather. Unfortunately, I mistakenly bought a large can of pumpkin pie MIX at the store this week (the MIX and the regular are in almost identical cans) and didn't realize it until I opened it for the chili. Luckily, I caught my mistake as soon as I got a taste and BEFORE I added it to the chili. I had smaller cans of regular pumpkin on hand so that's what went in the chili. I was just about ready to throw out the pumpkin MIX, since it has 17 net carbs in 1/3 cup and added sugar, but decided to keep it and see if there'd be a way to use it very, very sparingly.

So, last night I made the recipe for the Cinnamon Breakfast Muffin (which I like as is) and just replaced the yogurt with the same amount of the pumpkin pie MIX and, of course, deleted the sweetener since the mix is more than sweet enough. Anyway, I really, really liked the end product, but DH thought it was too dry and needed more "sweet." But I like it enough, I think I'll keep using it to use up that pumpkin MIX.

Lots of housework and laundry on the to-do list for today, as well as getting my sister's birthday package ready to ship. Hope everyone has a good day.

sandy be careful of keeping that pumpkin mix hun it is easy to say don't waist good food but stop and think of the waisted carbs. and the fact that you are giving your body sugar. plus you have to change your mind set to think it is ok to give my body only what is best for it. if an artificial sweetner didn't suit you you would not hesitate to get rid of it! my grand daughter was eating an apple, she only took 2 bites i wanted that apple so bad but i took it out and threw it in the outside dumpster to teach my self it is ok to throw it out versus throwing it down my throat!

A very valid point, Laura. I'll give it some thought. My first impulse was to toss it. The amount that goes into the muffin is 2 tsp, so it cuts the net carbs to just under 2, but there's still the sugar to consider. Hmmmmm..... Good for you to toss that apple...Eve wasn't the only one getting tempted, I see! LOL!

Sandy glad that you caught that before adding it to the chili. Is the chili bean free? How many carbs? I only did one mile on my walk today, because it was sooooo windy and cold. I just didn't dress for that so I just came on back home. I did, however, do about 5 trips up and down the lane, which would probably add another 1/2 mile. Have a great evening, Sandy!!

Stef, the chili is bean free, 8.4 total carbs in 1 cup, 5.48 net carbs. It definitely has veggie carbs!! The recipe is called something like Liz's Famous Pumpkin Chipotle Chili over on the Atkins site. It was cited quite a bit but I could never find the serving size, total servings, and nutritional details! Maybe I was looking in the wrong places. So, I made it a few weeks ago and entered all the stuff on a blank meal. When the chili was done, I measured it all out with a measuring cup to see how much it made. I've got 2 entries in favorite meals: 1 for the entire batch and 1 for a 1-cup serving, if you want to take a look to see what's in it. My entries reflect more meat than the original recipe, 1.5 pounds instead of 1 pound. With this batch, DH wanted even MORE meat, so this batch was 3 pounds of meat! I just double the meat entry manually when I enter it off the favorite meals - for this batch anyway. It would have been perfect for you after that blustery walk.

Just watch out for the chipotle peppers!!! Even if you like things hot, start with just a very small amount and go from there!
