Seems that acidic foods -- vinegar, lemon juice, yogurt -- are our friends when it comes to metabolizing carbs. I'm trying to avoid most carbs, but I think I'll try a little experiment: When I eat something starchy or sugary, I'll make sure to eat it with something acidic. Plain yogurt on a baked potato (although it seems to me that sour cream should work, too!), lemon juice or wine vinegar added to pasta sauce, etc. I usually add a little bit of apple cider vinegar when I make applesauce -- I'll keep doing that.

I take 3 tbs of apple cider vinegar 3 times a day and my fasting glucose numbers have come down by 50 in the last 5 days. From 206 to 143, they are still not great but much better.

i use salad dressing from walden farms that has a lot of vinegar in it. I also use the bacon ranch flavor on my baked potatoes and use the cole slaw dressing to make my cole slaw. I have a mexican style dressing for my taco salads. I buy the "walden farms" dressings on line and in the grocery store. No calories, no carbs.!!

Acids actually go alkaline in the body which does it good. Too much acidity is the cause of many ills...weird huh? Eat acidic food and you alkalize yourself..

Thanks for the comments, everybody! (Mmm... bacon ranch...) :) You all just reminded me: I used to get galloping gastric reflux, starting in my college days (and I wasn't even overweight then!). Been on various Rx meds for it -- some worked, some didn't, and the ones that did work quit working after a few years. Taking a tablespoonful of straight vinegar hurt like H-E-double-toothpicks for about 30 seconds, but then after that it seemed to help for a while. The GERD has improved a lot since I started losing weight. I hope that trend continues!
