Well...my garden is starting to produce products. In some cases too much. I posted a couple things on the forum on what to do with too much zucchini and too large of cucumbers for dill pickles.
If anyone has ideas I would appreciate the help! :)
I think I am nuts planting this stuff cause now I have to do something with it. I love seeing that I have grown the produce...maybe I should sell it at a farmers market!?
Tonight is canning dill pickles...exciting stuff for a Friday night! ;)

My neighbor suggested I slice and freezer my green peppers and use them this winter in chili, soups, and spaghetti sauces. I used to have a recipe for spaghetti sauce. I need to find that. Also, the pepper are good sauteed and put on hot dogs. When our younger was in this last weekend we grilled steaks. He sauteed some with onion and they were great on top of the steaks. YUM! I have shredded zucchini and put in the freezer. Of course I've made zucchini bread and chocolate zucchini bread too. I need to clean out my freezer! I am going to have bag after bag of zucchini alone! The link didn't work. I brought me to sparkpeople...but then I needed to sign in... :(

I wash and freeze my tomatoes and then bring them out when it is cold outside and cook and can them into tomato soup...YUMMMMMM Much more comfortable canning in January when it is below zero outside than when it is 90 degrees and humid!

zucchini lasagne or zucchini parmigiana are both really delicious and low in calories. Google some recipes and freeze the dishes.
