hello everyone! Today was a great day as usual. i went to work at 5:30 and got off at 12. I've been doin' homework ever since...due to a water main break my college has been closed all week...so I have more time to work on my paper...
As for my diet, it's going very well...I just find that I almost don't want to eat even though I'm starving because I don't want to eat the things I'm limited to. I really want some BBQ chix and some Mac n chz....I need to hurry up and figure somethin' out 4 dinner before Sean gets off...he's grumpy when he's hungry...
So far today I've had
A shake- 2g carbs 1 cup of Broccoli & cheese- roughly 5 g carbs A big cup of steaming chix broth around 1 carb
I'm now HUNGRY AGAIN. But I don't want anything I have in this freakin house....somebody heeeeeeeeeeeeeeeeeelp

Have you tried sugar-free barbeque sauce (check labels for carb content) on grilled chicken and I love cauliflower cheese bakes. They almost make me forget about mac and cheese (one of my true enemies, lol)

My cauliflower bake is easy. Steam a head of cauliflower, cut into florets and place in a baking dish. Mix together 1/2 cup of mayo, 1 cup cheddar, 2 T grated onion, 1/2 tsp garlic powder, 1/2 tsp paprika, salt and pepper, add a little more mayo to make it spreadable. Spread over cauliflower and bake at 400 until the cheese melts and gets crispy. It is a favorite with my husband's family (they are all on Atkins) and they call it "Frosted Cauliflower"
