Not weighing in makes me nervous. I'm watching every thing I put in my mouth, but I don't feel different. What if after this experiment, of not weighing myself for 9 or 10 days, I lose nothing? Or worse, I gain? I'll feel like a total failure. I don't feel different. TOM better show up. He's due tomorrow or Friday, let's hope he shows up with bells on and soon.
I made an ABSOLUTELY delicious dinner last night, and it was all because I had to use up some peppers that are a day or two away from no longer being edible. I don't know what you'd call it, but I called it delicious! Here's the recipe:
6 thin skinless and boneless chicken breasts ½ green pepper, chopped ½ yellow pepper, chopped ½ red pepper, chopped 6 pickled jalapenos, chopped 1 tsp minced garlic ¾ of a block of fat free cream cheese 1 cup reduced fat shredded Mexican cheese 2 cans no salt added tomato sauce 1 can Ro-tel, drained 1 ½ tsp sea salt 1 ½ tsp pepper 1 tsp chili powder 1 tsp hot adobo 1 ½ tsp cayenne pepper 1 ½ tsp cumin
Preheat oven for 350 degrees
Combine chopped red, yellow, and green peppers with jalapenos and garlic in a bowl. Add in the cream cheese and blend all of the ingredients together. After the cream cheese and pepper mixture is blended smooth, add in the one cup of shredded cheese, and continue to mix until all of the cheese is mixed and blended in.
In a semi-deep baking dish, pour the two cans of tomato sauce in the dish, and then fill one can half way up with water and mix into the sauce. Drain the can of Ro-Tel, and combine it with the tomato sauce. Sprinkle ½ teaspoon of each the salt and pepper, as well as the full teaspoons of hot adobo and chili powder into the sauce and mix in.
On a clean dry surface, take one piece of chicken and spread it out open. Take approximately a tablespoon of the cream cheese mixture and spread it over one side of the chicken. Starting and the top of the chicken, roll it up, and place in the sauce, seam side down. Continue for the remainder of the chicken.
Once all the chicken cutlets are stuffed, sprinkle the top of the chicken with the remaining salt and pepper, and then the Cayenne pepper and cumin. Put in oven and bake for 40 minutes.
Serve over rice or with vegetables.
It was really delicious I just made it up on the fly. I'm sure there are things that similiar to it, but that's all mine :)
Oh well, I'll weigh in on Monday or Tuesday and hope there is a positive change. Otherwise, please pray for TOM so that way my foul mood goes away.
Also, I got my yearly increase, not as much as I would have hoped, but at least I got something, so I'm not complaining, I'll be happy :)
