Cauliflower, Broccoli and Mature Cheddar Gratin

Fantastic, delicious and nutritious vegetarian dish.



  1. Bring a pot of water to boil and in the meantime chop the broccoli and cauliflower into florets.
  2. Boil them for 5-10 minutes or until soft. Place in an ovenproof dish.
  3. Mix the grated cheddar cheese and chives (salt or pepper as well optionally) with the creme fraiche.
  4. Pour into the dish, over the vegetables.
  5. Place the dish in an oven or microwave and grill for 7-10 minutes or until golden.
  6. Enjoy!

Used this recipe with low-fat plain yogurt instead of creme fraiche and it was fabulous! Of course, the cheese is not the best for South Beachers, but this was a perfect treat for me.

I agree that sour cream would be much better, the creme fraiche was quite expensive and what else would I do with it? Otherwise it was a hit at the party I took it too.

I found this a bit bland but I think I may give it a second chance and try it with sour cream or yogurt instead of creme fraiche.
