Going very slow
I'm with ya. After a week I am already wanting to fit into new (old) jeans. Ready for some instant gratification here!

Need new foods!
Boring but easy - Microwaved broccoli or california mix with salt and pepper

My fave - a bit of avacado on tostada (but not as healthy)

I love broiled asparagus!

I like to stir fry, so I put in onion, carrot, celery (fresh), chicken and then a bag of random stir fry veggies with anything from water chestnuts to peppers to mushrooms or just good ol' california mix. A one pan dinner. You acn add cooked rice and soy sause to that to make your own 'takeout' fried rice.

Love bok choy in a stir fry, though I don't make it myself I get it when we eat Vietnamese food.

Love the tiny corn thingies in stir fry too.

Hmm, I'll keep thinking.
