Another rainy day in NJ. Today I did meal prep for the next few days. I made my son his Chicken Parmesan with pasta for today. I also made my beef enchilada's for tomorrow and Eggplant Parmesan for Sunday. I figure there will be leftover to carry us a few days.
Tomorrow are Sunday we will replace the roof on the 2nd pool shed as it is shot. I also have to cut out rotted wood and splice in new on the Barn Shed, plus make a new cupola for it along with shutters. So I figured with all the physical work I wouldn't want to cook afterwards.

Oh well the new shed is done... Now I am repairing the other two. The older one had a lot of rot on the trim, and doors. So I rebuilt the doors today and started repairing the lower 10 inches cutting off the rotted siding and splicing in new wood.
The good news is I made my "High Chile" yesterday so I had a bowl of that for lunch an a double severing for dinner. I also made donuts yesterday, and a strawberry box cake. I added in chocolate cream filling and fresh strawberries on top. I think I got a slice of that and one donuts over the last two days. Nobody likes my baking, been called a frustrated Betty Cocker. they make fun of me but they eat it all no problem.
Told everyone with the meat shortage they better get ready for veggie dinners fish and noodle casseroles meals.

Well the shed is done! Just got to build a step or ramp. The doors are offset to accommodate the pump an filter for the pool. So I guess since it is basically completed I better cut back on the carbs and calories as I have no real exercise to burn off the excess food. I mean I do yard work like today, but I won't have to do that for another week.

well back to the salt minds so to speak. Really overate the last few days. Re-started the diet part today nothing crazy just trying to keep it to 200 carbs and 1800-2000 calories today, will slowly step it down during the week, hopefully it will get off this plateau I seem to be on.
Just had breakfast going to finish my last cup of coffee and then get to work in the yard today's goal is to clean and area behind the old and new sheds, maybe get the white trim painted on the new shed.
Like I said hopefully the calorie and carb step down, along with he work will jump the body to burn some of the dreaded fat.
