So i didn't end up making the chicken today, instead my mom and i made an egg casserole lunch! mixed a dozen eggs, whisked into a bowl, and threw in some cut up veggies(we used mushrooms, broccoli, onions, and tomatoes), some shredded cheese, and some salt and pepper, then baked it. it's delicious, filling, and a great way to get in some vegetables, which i'm kinda bad about sometimes. Since we cooked for lunch, we decided to make the stuffed chicken tomorrow!
i'm getting very lax in my eating, i feel like. i want to try to cook more to get out of that mindset!

Had an oops moment yesterday! went shopping for mom and myself for some meals and kinda went overboard with a pint of Ben and Jerry's and some unsalted mini pretzels :P But that's okay! i'm back at it today. it was good while it happened, but the feeling i have right now with my messed up hunger levels was deffo not worth it haha.
tonight i'm going to try my hand at making stuffed chicken breast :) i got some sun dried tomatoes, spinach, mozzarella cheese, and possibly some mushrooms as well! if not i'll be sauteing them and adding them to the sauce. gonna pair that with some brown rice and maybe some broccoli or green beans :)

Yay! I lost a pound! My actual highest weight i never recorded here, but from that i've lost about 10 pounds :) and now i'm 10 pounds away from my first goal weight.
i got kinda down on myself last night because i had some doritos(luckily the last of the bag or my intake would have been WAY worse) and this morning i woke up wanting an Egg McMuffin, which was my signature breakfast on the way to school for almost a year. Luckily we had some breakfast sausage patties leftover so i took my double fiber english muffins, some cheese, a patty, and an egg fried in cooking spray and made a healthy one.
i need to try and not be so hard on myself when i "mess up". i'm not dieting, i'm changing my lifestyle to be healthier but sometimes i still have that diet mentality of "certain foods are OFF LIMITS". but i know that's not a sustainable way for me to live, so i have to remember that i can allow myself unhealthy food sometimes, as long as i don't make it a habit. i know it's not good for me, refined sugars and starches are my kryptonite and having even a little bit makes my body want more, but i have to learn moderation!
