Happy 4th Quarter! Okay, I've been gone most of the spring and summer, and I've not fallen off the wagon so much as quit paying attention. I was still eating mostly the right stuff, but at all the wrong times, and sometimes over eating, sometimes under eating, but not tracking any of it so I sort of lost my compass. And I gained 11 lbs. But you know what? I don't care.

I'm not going to let it derail me in any way. I'm back on my tracking, back on target and all my clothes still fit fine so those 11 lbs are merely here on holiday and they are going home soon.

On the upside, I had my annual physical last week. I am exactly 20lbs less than I was at this same time last year. After my 20+ year history of Type 2 diabetes, my doc still checks my A1C every visit. This week's reading was 5.2. As perfect as could be :-). He told me last September that I was "no longer at risk for Type 2 diabetes" but he still likes seeing the pretty numbers and so do I.

This year, at the end of the visit, when the doctor usually goes over with you what you need to improve on, he just shrugged and said "I got nothing. You're doing all the right stuff. You got this. See you next year."

So my new thing is Chaffles. Have you people HEARD of these things? Maybe I'm new to the idea and everybody knew about it but me, but this is a GAME changer. These things are bread! I have about a half-dozen basic recipes that I use for everything from buns to sandwiches to, well... waffles.

The basic recipe is 1 egg, 1/2 cup mozzarella cheese, 1/4 tsp baking powder, 1 T almond flour (kind of optional). You can switch the cheese for any cheese you like (even cream cheese), use coconut flour, other nut flours, protein powder, flaxseed, chia, and the list goes on and on. Add any seasonings you want and cook the mixture on a waffle iron. Now, the craze is to use these little mini waffle irons that make one 4" waffle. The recipe makes 2 of these. If you're so inclined to grab the little waffle iron, two 4" waffles makes the perfect sandwich for around 1 net carb for the "bread". They also come in dessert flavors.

Here's a picture of 2 Oreo chaffles (3 net carbs for both of them) with 1/2 cup rebel ice cream (1.5 net carbs), some whipped cream with a touch of stevia, and a drizzle of sugar free dark chocolate syrup. The total dessert came to under 6 net carbs and was enough to share.

For the month of May, I decided to conduct a small experiement. Well, "No Weigh May" is over and I am quite pleased with myself. This past month was about balance between watching my health and living my life. The goal was to just eat and enjoy life without tracking my food, without tracking my weight, without worrying about every gram of anything. I have been eating this way for 15 months and I should know instinctively what I can and cannot manage. I will admit to cheating a little bit and jumping on the scale a couple of times, but I did not let the results alter my day. This was a challenge month because in this month, my son, my brother, and my mother all had birthdays. But I survived, and even enjoyed myself. So the results:

April 30, 2019 - Weight 151.6
June 03, 2019 - Weight 152.4

Yes, there is a tiny upward tic, but I know from 15-months worth of tracking that this amount is completely insignificant and I can make it go away in 24 hours. I still want to lose 5-10 more lbs (2-4kg), but I'm in no hurry and I'm fine with hanging out here at around 150 (68kg) and working on my tone while my skin catches up 🤣.

In short, I have basically arrived at my destination. I'm sight-seeing right now and learning to live in my new environment--one that contains loads of nice small clothes for me to wear! Over time, I expect to divorce myself from my scale forever. It was just a tool and it's usefulness is waning.

Happy Monday everyone!
Better life through better food...

Ha, joke's on me, I guess. Remember my nice post about how content I was at my current weight and that I didn't care if I lost the last 7 lbs?

So... I woke up yesterday morning and stepped on the scale. I stepped off, waited for it to clear, then stepped on again. NO WAY! Suddenly, those pesky 2 lbs that have been bouncing back and forth for the past 3 months, FINALLY got offended and left and they took a buddy! Yahoo!

Then this morning I got on the scale again (because I'm a little obsessive, but I keep it in check <grins>). Yep, gone.

I still stand by what I said. I am happy with me and really, this is just a new number (although I *do* like numbers...) and nothing real has changed in me. I am still wearing the perfect size for me and very happy with my clothes and how they fit. I love my energy levels and my ability to go to bed tired at night because I worked hard or played hard, not because I exhausted myself just moving me from the sofa to the bathroom to the kitchen and back.

Yesterday, I taught my second granddaughter (age 7) to ride a bicycle without training wheels. Then I played a game of freeze tag in the park with a 30 something Dad, his 10 and 8 year old daughters, and my granddaughter. I played and played like a kid! I even fell down and got grass stains on my knees. THIS, ladies and gentlemen, is exactly WHY I wanted my health back. I have a great life to lead and I just needed the energy to enjoy it.
