Debbie Cousins's Journal, 30 September 2022

Good morning. Nice weight loss this morning, down to 234.4 (from 235.6, but the day before that was 235.0). By adding crunchy vegetables to my Chinese Casserole, I am able to cut down on the amount of Asian Rice Noodles I put on the top. One serving is 28g and 130 calories. I had already cut it last month to just 14g on top. Now, I have cut it down to 8g, which is just a little sprinkling. I've started leaving more crunch in the peppers, onions and celery when I cook them, and this week I added bean sprouts and water chestnuts. I MIGHT get to the point where I eliminate the Rice Noodles altogether.

It's been cold, and I've been drinking hot tea to warm up in the mornings. It "costs" me 65 calories to have a cup (15 calories for 1 tsp of real sugar, plus I use two Truvia, and 1 Tbsp. of Heavy Whipping Cream for 50 calories - it just doesn't cut it for me with half & half, or with all Truvia).

I've still been staying in my 1500's to 1600's range, even with eating a piece or two of Halloween snack-size candies a day.

Going to try to increase my activity level today, since my knee is feeling much better this morning. Won't do anything particularly strenuous, but I won't just sit in my recliner with my knee propped up all day, as I have done for the past several days.

My husband's uncle said yesterday that it's about time for me to bake another Franklin Nut Cake. I don't dare! I don't even want to enter it into my Cook Book, because I know the calorie count would be outrageous, and I don't think I would be able to resist having a slice, or two, or three! Sometimes, the best way to conquer temptation is to avoid it altogether.

Oh, I've done something else today and yesterday that I don't want to get into the habit of. I've been having an extra 1/2 slice of Dave's Killer Good Seed Bread with Butter. That's in addition to the one slice I have for breakfast and the one middle-of-the-night slice! Before I started dieting, I was eating four to five slices a day!

OK, gonna get busy. Praying we all have a productive day!

Continuing with the great focus, Debbie! 👍 Ah, baking. It's so fun to do, but you wind up often with more baked goods than you want to eat...but they beckon... 😂 I make a mean lemon pie with an all butter crust, but I've been refraining from making one. Now, if only my husband didn't enjoy baking biscotti so much! At least he makes them vegan, cuts way down on the sugar in the recipe, and makes them half whole grain. It's then my responsibility to eat them only in moderation

I feel your pain concerning the Franklin Nut Cake. I made a Date Cake last week and despite increasing the number of portions, sugar was on overload in that particular cake. I keep track of both sugar and sodium and have a few go to treats that are reasonable. That little square of cake caused me to have to forego my other usual sweet fixes for the day. It tasted great but wasn't sustaining. I ate my other usual sweet allowances and found my sugar way over my goal. I like your idea concerning your casserole. Those little changes can really add up in a positive way! You're seeing the rewards! :)

The peppers, onions, celery, bean sprouts, and water chestnuts are great.
