Do you know that salmon skin is one of the richest natural sources of collagen? I believe any fish skin is. While ago I read about these medical skin transplant patches made of cod skin. They are very expensive and used to treat severe wounds. It has something to do with them being bio-compatible to our skin to accelerate healing.

I remember I was thinking at the time that maybe in ancient times it was used too but then forgotten?

Anyway, I always loved fried salmon skin sushi – it was always my favorite type. Nobody in my family likes it but they know I do, so if we are having salmon, all that skin is mine! LOL …when fried it tastes a bit like pork rinds, same crispy but thinner. I use grinded pork rinds to add some crispiness for salads and sides, to substitute crouton crumbs.

I made cocktail nori wraps with sashimi, fried salmon skin, cream cheese, fried tomatoes and capers. The whole set was about 400 calories including the sauce!

Those were good - one can add different things whatever they prefer, like ginger or daikon. I usually add cucumbers, but I did not have any, so I just used tomatoes. For extra fat - avocado. Just need to estimate desired calories - quantity.

Your presentation of the dish was elegant. Not to much nor to little.

Bella how do you fry it? We had salmon the other night, and the skin at the edge was crispy and delicious! As one with a collagen disorder, I need all the collagen I can get! I love the idea of pork rinds for the extra crunch!

Bella, crispy salmon skin is my favorite, too! I spread the skins on a sprayed cookie sheet, sprinkle with S&P and a little cayenne, bake in the oven, turning several times until crispy. They come out like potato chips - and I'm the only one in my house that likes them - yay!

It is so good for you - but I just cannot get past the fact that it's skin, haha. I give it to my dogs, so at the very least it isn't going to waste. 😆

Larilyn I am doing this with my skin the next time I fix salmon! Yummo!

>Tailorlady> I just salt and pepper it and pan fry with a bit of olive oil, until crisp. :-)

> kendrawilkinson > I am not really "trying hard" or do it to impress anyone... assembling little dishes, taking pics, posting - distracts me from the desire to eat it and I am able to keep my intermitted fasting schedule...:-))... and I like nice looking things, why not?

if I knew you irl I would doante myine and boyfriends salmon skin. It goes right into the trash after we eat. Is so slimy after baking, I'm having hard time picturing it actually frying. Is it deep fried or just in a skillet?

"if I knew you irl I would doante myine" ...lol..I fry it on the skillet, it becomes crispy like chips. I think it is like bacon - its also slimy when it's raw. I remember first time I tried salmon skin sushi somewhere just out of curiosity and it was deliciously crunchy and flavorful. Became a fan since then. :-)

> KDSwilddream1 > Thank you for your support! :-) I do not mind criticism, maybe for somebody who is not digitally savvy it looks like I put a lot of efforts into pictures, but it is just one snap with a camera and maybe 1 min of editing in the app if I want to add some funny stickers - I do designs like that for living, so its not a big deal. I noticed that I perform better when I discipline myself with some kind of "records", that is why FatSecret works so well for me. I like to look at other peoples achievements for inspirations too.
