Ok, so I have been eating horribly and barely exercising for most this week. And my weight is showing it. Although I must admit that I thought it would be a lot more terrifying this morning. I am sad that I allowed myself to get back over the 110 mark after FINALLY getting below it, but it is what it is. No sense in being mad about the "should haves" when I can focus on the "what I am going to do"

I have managed to stay away from wine, but then I replaced the wine with tacos. Tacos are delish. When I first found out that I could have gluten, one of the hardest things was finding out that Taco Bell was barely considered real food and had wheat filler in EVERYTHING. I was crushed. So I learned how to make my own tacos.

I make a bean/rice filler in a large batch (sometimes I add lean ground meat) out of white rice, black beans (or whatever I have in the cabinet- so far there doesn't seem to be a bad type of bean for this dish), some fat-free refried beans, and a ton of taco seasoning. Throw everything in a large skillet/pot/whatever and add the appropriate amount of water for the rice + a half a cup and let simmer for 20 minutes. Then I let it sit for 10 minutes while I bake white corn tortillas in the oven (thank you Pinterest). I then separate some of the batch and add ot taco sauce, and crushed red pepper because I think that is how tacos should taste and hubby thinks I am insane.

Granted these are healthier tacos that don't use any oil and aren't fried but thanks to stress I can sit down and eat my body weight in these things. They are soooo addicting.

Ok, not my body weight but enough that makes a normal person wonder if I have a hollow leg. <--- that is not an exaggeration.

Yeah- I went through a big batch and a half of the previously mentioned taco filling (which also makes awesome omelet and pepper filling too BTW- we are such lazy cooks!!)in four days. With only a little help from hubby.


This monkey has better eating habits than I have had for most this week. Yup, I am being showed up by a monkey. Awesome. Still, I like to think that if the monkey had the option to pig out on tacos he would forget that bananas even existed.

Yesterday was a new day though, and I ate healthy, ran almost five miles (9 minutes 15 seconds per mile) and slept well. And I had tacos. I can't help it- mashed potatoes, french fries, tacos, potato salad.... these are all my comfort foods I need my comfort foods, they make me feel better. The problem is I need to stop after the freaking dozenth taco LOL!!!

I will be traveling Sunday through Thursday- and hopefully this trip will solve a lot of my stress... any nice thoughts or happy wishes sent my way would be greatly appreciated. I will still have internet connection but who knows how much time I will actually have.

Hopefully my mood will be more like...

... by the time that I get back. I won't be able to run, but I may be able to do some exercising in the hotel room. And I am hoping to eat healthy the entire time.

Yeah, we will see how that goes.

In other news, I have decided that I am going to open my very own Etsy shop!! I am still working out what I exactly will be selling, but so far I have decided on stitch markers (I have been addicted to making these really cute robot ones but I realized I kept making them even though I only need one or two at a time.... oops) and then I will be selling hand-crocheted purses and blankets as well. That is as far as I have gotten- we will see how it goes.

- Being crafty makes me happy
- Pinterest
- Coffee
- Good friends
- Warm weather
- Having the right shade of lipstick in my purse totally on accident
- Running

I'm sending good intentions for your travels. Where are you going and why? Good luck on the healthy eating, I find it's more difficult out of town. YAY for Etsy! I love it there. I've only had 8 sales, but it's a work in progress. Let us know when you're up and running-I want to check it out! :)

Savannah, job hunting. We want to move so badly and it has been so stressful because we currently live in Wisconsin. Thanks for the luck- I love looking at your Etsy store- I think you are so talented!
