Messed around with a recipe online to make something like gingerbread pretty close, but could use a bit more spice and maybe some chia to add a denser texture. this is super light!!

definitely... and family has been eating cake around me.. I noticed me going man I want a bite, so I figured I better dabble in the kitchen and find something to satisfy myself before I snag a sugary cake

Oh, my! I don't miss cakes, but ginger cookies? Sigh. Ginger itself has more carbs than I want to believe. But maybe I can devise a chewy cookie using glucomannan...

1/4cup ground flax seeds, 1tsp baking powder, 1 tsp cinnamon, .5 tsp ginger, few shakes of nutmeg and clove, pinch of salt, 1tsp erythritol, 2tbsp heavy whipping cream (recipe called for milk or unsweetened milk substitute), 1 egg. combine all well and microwave 1.5 minutes. Whisk 4tbsp heavy whipping cream and 1tsp erythritol. I have a hard time whisking smaller amounts of liquid so yeah. I made a double batch it almost over flowed a 20oz bowl.

try using chia seeds for a chewy bite.. that's what I used for Brownie with fat in with it

Honestly I don't know. I haven't played around with almond flour. I don't eat many almonds, because sometimes they make my tummy off. Maybe some day though. I have just been getting things little bit at a time that are not the run of the mill things, like ground chia and ground flax. I had chia seeds though.
