My second Keto Muffin breakfast looks much tidier than the first one and a lovely 722cals and 11g carb contribution to the day. That's just what's needed after a 16 hour IF. Tonight my wife is cooking my favourite beef Rendang and so I need to find a near zero carb lunch if I am to keep today low carb.

Very nice indeed! I haven't heard of beef rendang before, but i just looked it up. I love beef especially in a curry.

Beef Rendang is ace, Sweet and hot altogether. Beef brisket or skirt is a popular meat cut for it. There are a few recipes online. We generally use a long slow cook four and 3/4 hour method. it makes for a dark meat look http://norecipes.com/recipe/beef-rendang-recipe Many chefs have a version online do have a bash at one sometime

Your brekkie looks very like something we would have minus the bread. I never heard of the Beef Rendang either. It sounds delicious.

That is not real bread - it's a one minute Keto Muffin. About 3g of carb

Rendang is gorgeous. I'm a lover of anything spicy but that slow cooked, rich sauce does it for me every time. I even have a version in my cookbook here. Last night's dinner and therefore today's lunch was a hot yellow coconut fish curry - lots of chilli, lemon, turmeric and coconut milk
