So I tried making something new for dinner tonight. A main item that I could eat that was low carb but something the rest of my family would eat since they aren't. I took some cheap rib eyes (think dollar tree ones) and chopped them up. I added some spaghetti sauce from trader joe's and some frozen veggies. I did saute the steak in some bacon fat but I usually don't make steak with tomato sauce. It came out pretty good. I used my rice steamer for them and skipped that part for me. Since I didn't use full servings of the sauce to cook with it was decent for the amount of carbs.
If I cook something complicated for myself they get a simple meal and if I cook something hard for them I usually get a simple meal. I'm trying to find meals for all of us so I don't have to do a ton of extra work BUT hubby will not eat broccoli, cauliflower, most cabbage dishes, and most other low carb veggies. He likes peas, carrots, potatoes, and so forth. Zoodles he'll do occasionally. Thankfully green peppers are okay.
Usually I get the dollar tree rib eyes to use it place of steak-ums. They cook quickly and are easy to chop up. Plus pretty cheap at a buck a pop.
