Been wanting to show a picture of my favourite take-to-work lunch, here the mushroom and red peppers are the guest performers. The line up isn't always the same as it depends on what I have got available, but basically it goes like this. I don't usually arrange them all quite so tidily before mixing them up, but it often looks approximately like that as I chop and then push to the side each item.

Lovely looking chopped salad! I must confess this time of year I tend towards soups but my chopping board often looks a bit like that before I cook the veg and add the stock :)

Yup it is Feta - the combination of feta, olive and tomato is what brings me back to this salad time and again. I like to add a small amount of red onion not as a front flavour but more as a background surprise/contrasting note, cucumber lettuce celery and cabbage provide varying textures and tastes, sugar snaps just really re-vitalise me, grated carrot or broccoli are generally added more for content than taste (they unbalance the flavour but are useful nutritionally) then if I am adding anything else it is generally 'just for fun' such as cranberries, or halved grapes. I most often will add chilli sauce partly because I really love the taste of it and partly because I know it is a metabolic booster - but sometimes I just don't want to add it because I also love this salad without any other condiment. much as I do love the feta version, I also like a version with crab-sticks instead.

oh yes, and this works really well (if using chilli condiment) with some chick-peas added (instead of the pitta bread, of course!) but I love using pitta more because I can quarter the pitta and then balance salad on top which is great fun, the chick pea version just isn't as entertaining to eat so I don't make it as often but it tastes brilliant too.

Love feta and crab sticks. Lived on this kind of salad when I was in Greece, just can't get toms that taste as good though. Or feta actually! Must be more adventurous with my salads. Ta ARB, nice recommendation
