Wanted to share a low carb Peanut Butter cookie recipe I found online that I really liked. *No eggs needed

Quick Low Carb Peanut Butter Cookies

1 tablespoon of peanut butter
3 tablespoons of unsweetened almond milk, or milk of choice, divided
2 tablespoons of coconut flour
pinch salt
1/4 teaspoon vanilla extract
1/8 teaspoon baking powder
sweetener to taste

Preheat oven to 350F.

Add peanut butter and 1 tablespoon almond milk into a small bowl or cup, and nuke for about 30 seconds, or until peanut butter is melted. Stir, add in coconut flour. Stir in salt, vanilla extract, baking powder, and sweetener to taste. Add remaining almond milk, one tablespoon at a time, adding more or less as needed to create the perfect “doughy” consistency.

Roll the dough into balls and make a criss cross pattern with fork. Bake at 350F for 10-12 minutes. Let cool thoroughly before eating.

Everyone's journey is different. In my experience it's not how much you eat but what you eat (macro nutrients) that is important. I love peanut butter cookies but have not had one in over a year because (for me) they are fattening. This recipe would allow me to have my favorite treat again, so I'm thankful it was shared.

these sound yummy. I will give them a try this week ..need to get the flour. do you know the breakdown for carbs, fat protein etc ?

I really liked them but needed more sweetener. Tired of sugar free popsicles and ran out of PowerAde Zero : ) For logging, I just put in the ingredients one by one (I made double today and had them as a meal : )

Wonder if almond flour would work, I don't have any coconut flour in the house.

Rhontique, I know the answer, read the rest of this comment. FloridaAngel, the recipe is awesome, it is a wonderful base to start from. We didn't have almond milk so we used coconut milk (from Costco 4g/cup) instead and 1/8 teaspoon of xylitol. They turned out great but it wasn't sweet enough for me and it tasted very coconutty (didn't bother me but I noticed the flavor). Lisa pointed out that almond flour was lower in carbs than coconut flour and my daughter said everything she had made with almond flour turned out amazing. So I followed the same recipe only with Almond flour and 1/4 teaspoon of xylitol. Everything was great as I combined the dry ingredients with the peanut butter, then it went down hill when I added the remaining coconut milk and vanilla. It was runny like pancake batter. But then!!! My wife said it reminded her of the muffin-in-a-mug recipes she had tried from the Trim Healthy Momma diet and so we poured the batter in a ramekin and nuked it for one minute. When we took it out we let it sit for a minute and then used a knife to transfer it to a plate, like removing a cake from a cake pan. It had puffed up light and airy like a cake and so I put a pad of butter on top while it was still warm and enjoyed it with a fork. I will be having the cake again (probably once a week) and I'll be working with the cookie recipe also. I'm almost giddy with excitement.

@sean that's great: ) Smart wife : ) Amazing how exciting a guilt free treat can be and its filling and healthy! I made a double batch yesterday and still lost a lb. Love the eggnog too, eggbeaters (to avoid salmonella), almond milk, stevia, nutmeg, real vanilla. Yummy! No suffering here, just healthy weight loss.1 lb a week is fine with me : ) A daily deficit of 500 calories a day.

FloridaAngel, thanks so much for this recipe and the comments from Sean. I was just looking for a cookie I could make for friends for Halloween and still have a couple myself. Will definitely try this one. I see on the original linked site, the author said she started with one packet of stevia, but I have 3 different brands. Two brands say a serving size is .5g, but the other 3g, which may be why the "to taste" comment. I would be interested in how much you all consider successful. And Sean, I can hardly wait to try the cake idea.
