Wanted to share a wonderful meal idea for Atkins followers or Low Carbers, in general. Fast. Simple and Delish!

Place a pack of chicken tenderloins in a crock pot/slow cooker. Add half a bag of frozen spinach. Then pour a bottle of salsa over top of it all. (I use Pace Mild Salsa) Cook on low heat for 8 hours. The chicken is so tender you can cut it with a spoon. The flavor is great, and it's a very healthy meal.

For the rest of the family not following Atkins, you can spoon the mixture into a tortilla and roll it up like a burrito. Yumm-O! Happy faces at the dinner table when I serve this. And the best part is it takes me only 5 minutes to prepare! Enjoy!! = )

sounds fabulous! will sprinkle some cheddar cheese on top and a dollop of cream cheese and eat it on my salad. I just got really excited about making this!!! LOL! Thanks Evie!

LOL, Paula. Sounds great! It would work great over a layer of lettuce. Note that it is rather thick but due to the marinated juices from poultry/spinach/salsa it has an element of "liquid" in its overall consistency. Not soupy, but more like a stew consistency. K?

Buffy, SO excited to report that my DH liked it and he is not a spinach eater at all. He commented it was way better than he thought it would be. He did eat it with tortillas, by the way. Enjoy!

Yes, thanks Missy! I sure will hon...just haven't had time to yet...but I do plan on sharing this with the FS community on the Cook Book for sure! I'm happy you found it worthy enough to add to your "Wanna Try This" list! = ) And Missy, I have also created an "Italian" variation which I can't wait to share with ya'll too. Just tried that for the first time this past Sunday and boy was it great! And followed by a two pound loss, me thinks it's pretty amazing! I appreciate your input!

I will be looking for the Italian one too :) I am so new at this low carb thing and and living alone with the kids. Haven't had much experience making healthy meals for my family. I love all the new idea everyone shares on here :) Thank you for sharing your meals with us

@Buffy, the profile pic is not my "start/before" pic. My "before" face was very round and adorned with an extra chin! LOL I have not yet posted any transition pics on FS as of yet... I need to get around to doing that. I chose this profile pic early on b/c that is what I wanted to set my goal as...to get back to *that face*...which I have done, thank the Lord. It was kinda funny when I was going thru security at the airport. The TSA officials looked at me and then my profile pic a second time to make sure it was the same person. What a difference 60lbs can make!
