So I made my first experimental gluten-free, lactose-free holiday dessert: pumpkin maple pecan gelato. This was based on a NYTimes recipe, but I adjusted it to use lactose-free non-fat milk; significantly reduced the sugar (by half)and changed out the honey (not fodmap-safe) for Grade B maple syrup. While it was churning, I made buttered pecans and tossed them with a little cinnamon-sugar, and added them into the gelato in the last 5 minutes. The result was really delicious -- the texture was more like ice milk than gelato -- probably because I used non-fat milk instead of 2% and the pumpkin puree has a high water content. But everyone in my household loved it. I'm happy to send the recipe to anyone who wants it. It's not low carb -- but it's certainly much lower carb and lower fat than a regular dessert, and if you have lactose- or gluten-free eaters coming, it's useful to have on hand. Oh and because it has no eggs, you could probably make it for vegans by using almond milk. This recipe makes 1 1/2 quarters -- the batch is so big that you have to keep an eye on it as it churns to make sure it doesn't overflow. I'm getting pretty good at this ice cream thing.
