The past week or so, I've come to a startling revelation: I am eating A LOT. No -- I don't mean that I've fallen off the wagon and into a permanent splurge. What I mean is -- by completely recranking my diet, and weighing and measuring everything I eat, I've gotten to the point that I'm able to eat a filling and diverse diet, and have days like today where I get through the day and I'm at 1173 calories, and I'm not hungry. I did splurge then and try out a gluten-free coconut bar recipe -- but even if that was 250 calories, I'm still OK. The point is, the combination of low-glycemic and FODMAP -- which eliminated wheat and a few other things caused a seismic shift in my diet and it's really working. I have never eaten this healthy ever. And I have never before had the sense that I have hit on something I can stick with forever --and that is really what I was shooting for. I don't want to be on a diet anymore -- I want a lifestyle that keeps me at a healthy weight and keeps my IBS under control. It's not perfect, but I'm getting there.
