Ok Keto/ Atkins buddies I found this recipe that I think is awesome and will most likely be a new go-to food for me. I was researching those MIM's and found one that is crazy simple, not too bad for ingredients, and I can bake a pan of them for the week and I am set for breakfast. Very filling too (8 grams of fiber per serving).

Flax meal English Muffins

2 cups whole flaxseed meal
3 TSP baking powder
3/4 TSP salt
3 TSP Swerve( optional or your sweetener of choice)
5 large eggs
1/2 cup water
1/3 cup oil (veg, melted cocnut, olive, your choice)

I used an ice cream scoop to portion the batter (after mixing all the ingredients together with a spoon) into my cast iron biscuit pan which makes perfect English Muffin size. Bake at 350 degrees for 20 minutes.

Makes 8 English Muffins ready to be fork split and toasted for egg sandwiches or peanut butter.

Those sound good! Do you have any idea of the carb count?

FS says cals: 265kcal | fat: 22.02g | carbs: 10.24g | prot: 9.93g per serving but mine are pretty big lol. You could easily make them in regular muffin tins or ramekins and get 12 instead of 8.

I don't think I could use them as an every day thing, but a couple times a week would be a nice break from just plain eggs and cheese.

Net carbs are only 2.3 though, geesh the diet calendar can be a pain.

I am relatively new to this WOE eating so I still get excited by this stuff lol. Doing without bread is tough.

I don't really miss bread so much as the convenience of sandwiches, especially for packing a lunch for work.

more reasons to get my remodel done! I love flax meal. Mix 2 tbsp of flasmeal with 1 tbsp of sugarfree jam or sugarfree syrup and spread it on a low carb whole wheat wrap and roll it up super easy breakfast.
