I am sick with a cold, but determined to get serious about my weight loss. The Podrunners challenge starts soon, hope I will be able to breathe well enough for running/jogging.

I found 2 recipes using flaxseed meal for muffins and pancakes.

Single Pancake recipe
2 eggs beaten
2 tbsp flax
1/4 tsp baking powder
van,cinn,splenda to taste
mix all together cook with real butter on low to medium heat till done.

MIM (muffin in a minute)
1/4 cup flax meal
1 tsp cinn
1/2 tsp baking powder
1 pk splenda
1 egg
mix dry ingredients first,then add egg mix all together put in coffee cup or small bowl microwave 30sec -1 min depending on a microwave. Can even add a pat of real butter if you like. eat and enjoy!!

I love zucchini and they are so low in calories, so I decided to make zucchini pancakes but use soy flour instead of regular white flour. I am not sure about the taste, have to try and post my comments. I made zucchini noodles the other day, but didnt add any sauce, just herbs and garlic and some vinegar - thay were so delicious!!! I want to create or find more quick and easy recipes for my daily diet to add a little more variety and more veggies.
