hi beckey :) i know it is definately easier when you meal plan! but i'm with ya on that, motivation only lasts so long and by dinner its gone, know what i mean?! lol! just try to think about what you're going to eat for dinner at least, and even try to prep it so that way you'll feel bad if food goes bad waiting for you to cook it :) good luck to you and the gym thing, i'm horrible at exercise, i should heed your advice!
