I am really getting into this lifestyle change. Last week I tried cooking Asparagus for the first time. I roasted the asparagus with zucchini, yellow squash, red onions, and bell peppers. It was really good.

This week on the menu, eggplant. Not sure how to cook it yet, but I am on a mission to figure it out.

I hope everyone else is doing well too! Take charge and take control.

I hope I can keep this attitude going too. I think as long as I continue to see good results (on the scale and with my health), I will keep going.

Oh please post how you end up using your eggplant! I have some in the fridge I need to prepare. I love it! I was going to look for a recipe to grill it but I hadn't decided yet when I was going to attempt it! :) Your roasted veggies sound very good! Your attitude is awesome! You can do it!
