Jen, have you ever made stacked enchiladas or New Mexico enchiladas? Super easy, no rolling and can make small portions. Your enchiladas look great. 👍

Um no, but now you have me intrigued! I will investigate. The enchiladas came out delicious, but I made them for rm and then ate some of them! I have low carb tortillas that I use for mine. But super yummy. The sauce has a nice creeping heat.

Thank you, hmbrown! She is timid and a little finicky, so my special doggy gets treats on top of her kibble to entice her to eat.

Hmbrown, my last dog was a very large, rambunctious and so loveable golden/yellow lab mix. I can relate!! This little sweetie was rescued from a hoarder situation and was half-starved. They all were. She weighed 25# when they rescued her, and now she is more than twice that. So she rightly has trust issues, and we spoil the heck out of her.

Poor baby! We had a rescue that was a Retriever/Shephard cross. The whole litter was thrown away in a dumpster - only 2 survived. That was my Shadow. He lived to be over 17!
