Debbie Cousins's Journal, 20 February 2021

Well, I couldn't go to sleep tonight. Took my regular sleep meds (Ambien and Hydroxyzine). Two hours later, took a Benedryl and a Cyclobenzaprine. Two hours after that, took two Excedrin PM. Two hours after that, I got up and made a cup of Sleepytime tea, and now I'm HERE at 12:24 in the morning!

I spent some time tonight researching a program by Real Life Keto. They have a 21-day challenge that starts the first of each month. If you do the challenge all 21 days, it doesn't cost you anything. (You pay $47 up front, and it is refunded when you succeed - it's not related to HealthyWage) SO, I signed up and will begin on 3/1.

One thing they want me to do is drink half my body weight in ounces of water every day. For me, that's 120 ounces a day (fifteen 8-oz bottles). I'm going to start that tomorrow, and limit myself to TWO 12-oz Diet Coke's (instead of a 2-liter bottle). When the challenge actually STARTS, I will go down to ONE can of Diet Coke a day. Just doing that one thing will probably make an impact on my weight loss.

I'm also going to increase my IF from 14:10 to 16:8. I will move dinner up to 3:30pm, then nothing else to eat until the next day, when I will hold off on breakfast (which I usually have at 5:30 or 6am) and only drink Hot tea with Cream and water until 7:30am breakfast. That's only having dinner a half hour earlier and breakfast 1-1/2 to 2 hours later than what I've been doing. Delaying breakfast will FORCE me to start getting my water in first thing in the morning.

I'm also increasing the heavy whipping cream in my tea from 1 Tbsp. to 2 Tbsp, so that will help me in getting in keeping up my Fat percentage.

Tomorrow (now today!), I will be making Low-Carb Spaghetti sauce, which I will serve over spaghetti squash. The whole meal is 13.12 carbs, but it is very satisfying and it's something DIFFERENT from what I have been having. Knowing that I'll be using those carbs, I am able to adjust the rest of my food choices to accommodate it.

Speaking of spaghetti squash ... I discovered something LIFE-CHANGING about it!!! It can be cooked in the Instant Pot MUCH more easily than the way I was doing it in the microwave. [With the microwave cooking, I had to pierce it several times, microwave it whole for 4 minutes to soften it enough to be able (still with MUCH effort) to cut it in half lengthwise. Then I had to microwave it for 9 more minutes, and laboriously scrape all of the "spaghetti" out of the skin.]

With the Instant Pot method, you just cut it in half crossways (not end-to-end) with a paring knife (not with my strongest and longest serrated knife, with all my strength), scrape out the seeds and pulp (which scrapes out MUCH more easily), and put the halves on a trivet with one cup of water in the pot. Then you pressure cook it on high for 9 minutes (for the small ones I made). When it comes out, it is SOOOO easy to "string," and all that is left when you are done is a paper-thin piece of skin. It also makes longer "noodles" for those who like to have them long.

Ok, I'm going to close this out before it becomes "The First Epistle of Debbie!" Starting breakfast late in the morning should be EASY tomorrow, since I will probably sleep in until at least 7:30. Wish me luck with my water drinking, soda curbing, and increased fasting times! I'm feeling good about this plan!

I couldn't sleep either. My husband gets up at one to go to work and I was still awake. It's now almost 2 and I'm feeling like I might be able to go to sleep... Glad to see you've got a plan. I always feel better when I know exactly what I'm going to do, winging it makes me cranky and stressed
