had a pretty good eating day today and worked out after i got home from work. also ran errands to return stuff at target and get a desk at ikea. definitely a super productive day. i had a super yummy dinner. potatoes are my all time favorite food. they're probably the reason i could never ever want or be able to be happy and do a truly low carb diet. i will not give up my spuds. but they are high in calories so i am weighing them out and logging them, also having a smaller than i normally would serving.

today i made a one bowl dinner. cooked a medium size potato in the micro and topped it with yogurt butter spread, 2 laughing cow cheese wedges, a bunch of broccoli, cauliflower and a little spinach and then a little low fat shredded mozzarella on the top. it's a satisfying meal and it's even pretty cheesy. i used to throw on tons of cheddar but now that i am becoming more aware about calories and learning how easy it is to pack on a couple hundred calories with cheese i am happily using the lower calorie cheeses and just as satisfying. this is pretty great news! and yummmm!

i feel pretty great! i am keeping up with everything and resisted butter cookies in the kitchen at work two days in a row. go me!!! and while at ikea i got hunger or food lust pains walking by the snack bar smelling the cinnamon rolls. i nearly had to give myself an internal mantra of "do not let the food control you, you do not need a cinnamon roll, i am stronger than the smells" over and over until i got out of there. then when i went to the car i had a snack i had packed with my lunch. i was already feeling hungry before going into the store so i definitely think eating more and not getting too hungry will make resisting crap even easier.

also i got my momma on fatsecret. i am helping her learn the site and figure out how to enter the food. i hope she keeps it up with me so we can support each other. how happy we will be when we reach our goals!

Never thought of putting Laughing Cow cheese on a baked potato. What a great tip!! Keep up the good work!

Hope your Mom is able to get the hang of it too! That would be awesome. Keep your proteins up a bit - so keep your hunger at bay...and great resolve to start again, and make this a time in your life to change YOU! For good!! Great Job.

thanks for the comments!!! the laughing cow on the potato is super tasty! definitely try it. my favorite is with the garlic and herb flavored one!
