Tamaralynn0480's Journal, 10 May 2013

Swelling went down overnight so took the chance to do my weigh in. Im happy with my progress, I'm down 2 lbs in one week :) And that was with eating ice cream last night (1/2 cup double chocolate with 1/2 tbsp chocolate shell drizzled over)... which I need to enter in my journal!

I'm realizing it's FINE to treat myself once in a while (not three times a day like I used to).

I've really been looking at what I eat now, I'm picky... the baked lasanga last night was SOOOOOO Cheesy and I only took about a cup and a half of the lasanga (it's not layered but the cut up noodles in the sauce). I took SOME cheese, but filled the rest of my plate with about 1/2 a head of roasted Cauliflower. I used one of the recipe ideas, and tossed the 1/2 head cut into florets with about 1/4 tbsp of olive oil, 1.5 tsp of Garam Marsala and some salt and pepper, then drizzled an extra 1/4 tbsp olive oil and top and roasted in oven at 425 for about 25 minutes (stirring half way through). DELISH! Unfortuantely I tend to have a bad side reaction to Cauliflower - lets just say I'm thankful my boyfriend's sinuses were acting up last night.

I felt slighly guilty eating so much... but overall I still stayed under my calorie budget for the day!

I've also been able to work with my lactose intolerance better and am finding it easier to see what I can handle and what I cant.

HAHAHA.... I worried soooo much about the "bad reaction" thing when I stared this raw diet. I used to get so embarrassed at how much I broke wind at work. That has almost gone completely away. I love cauliflower, though. And roasted brussell sprouts. Take romaine hearts and cut them lengthwise and coat them in olive oil and sprinkle your favorite seasoning (Cavenders greek seasoning is the BOMB for this) and grill like a steak on the BBQ... or broil on high and get the edges kinda burnt and crispy. BBQ works the best though. I know... you are thinking "gross, grilled lettuce!" but you will not be disappointed.

Oooo! I'm learning to love the roasted veggies! Im the admin for my office, and my office is adjoining to the Regional Manager of the company... thank god he's down to earth - he chuckles if he hears my little hiney burps - but keeps to himself. I've got some fresh brussell sprouts sitting in my fridge saying "roast me!"... will do that tonight. Will have to try the roasted Romaine hearts - I have done roasted Kale and love it - so I would probably like the Romaine too :)
