Cheeks's Journal, 02 June 2008

I weighed myself on Saturday morning for the Infinity and Beyond Challenge and I was at 184.8 (for a 1 pound loss this week)….I was expecting that I would have lost more come my regular weigh in this morning…but I was at 184.9 this morning =( So I gained .1 since Saturday. I know that this doesn't seem like a lot to complain about, and I should instead be celebrating the .9 loss this week. I think I'm freaking myself out because of reading that complications list for the fertility medication. I mean, I was GOOD, followed everything to a T…even got in extra exercise. Maybe muscle building? I don't know. Could just be the added hormones making me hyper sensitive to it all right now. Hahahah I'm not going to let this get in my head today, and will be good (even though I totally crave Thai food when I'm emotional), I will not let the emotional eating win.

Other than the weigh in getting me a little down this morning, I had a great week and weekend. We helped a friend move (that was lots of work! And 180 minutes go to my exercise for the challenge this week!), yesterday we walked down to WholeFoods, made a salad, then walked to a park (60 minutes) and I read magazines while my hubby studied for his night classes (he's going for his MBA). The weather was beautiful! Was in the high 70's! We also cleaned the house (30 minutes).

We got creative with desserts this week too. Hubby has been dying to try and make a yogurt ice cream with the WW yogurts. So I bought 4 vanilla yogurts, and added them to our Ice cream maker (if you don’t have one…I highly recommend it!). The yogurt turned out great…we'll probably add cut up fruit with the next one, or even try the lemon or lime yogurt and see how that freeze up. The consistency was nice and smooth…and we were able to enjoy ice cream on a warm day for only 2 points each :) Another thing we like to do is take 6 Cups Watermelon cubed, put that in a blender, add one squeezed lime (or one lemon will work too), and 1 cup of Splenda…blend that all together, and add that to the Ice Cream Maker. Makes a GREAT tasting sherbet…soooo good, and low in points…(serves 4…so that’s just under 2 points per serving).

We also did a lot of prep work yesterday, to try and make food for the week. Made Evelyn's Turkey burgers again, and freezed 4 of them so we can pull them out as needed…hopefully the apples will freeze well….we shall see!

Hope you all have a great week! =)

Great attitude! Don't let the 'only' 1 pound loss get you down-- 1 pound a week turns into 52 in a year! The hormones and the working out may have something to do with it-- I don't seem to lose as much when I am getting my workouts in like I should :) Keep eating right, drink lots of water, and listen to your hubby!

One pound is FOUR STICKS of buttah!! =D Sounds like you did great this weekend and are prepared for a great week!! I've made a turkey sausage with apple and onions that is delicious! I'm sure the burgers will be fine! Have a great day!

Putting things into perspective... a .1 lb gain is 1.6 oz. Like, having a good sneeze would take care of that! And I'm sure your hormone shot would have similar effects to Aunt Flo's arrival and we all know how she likes to put her toe on the scale. So don't sweat it! I'm glad you liked the turkey burgers enough to make them again. I definitely will make them again after we use up the ones we have in the freezer. They do freeze wonderfully, by the way. And I'm shocked that my hubby really likes them. He was the one who took them out for supper yesterday! So they are definitely better than your average turkey burger for him to voluntarily choose them :) Your frozen yogurt and sherbert ideas sound great. I have an ice cream machine that I haven't used in a long time because I shied away from the high fat recipes. Do you just put the yogurt in straight out of the container... nothing added (aside from the fruit you suggested)? Anyway, thanks for the ideas!

Thanks everyone for your words of inspiration =) You are right, and all your comments helped my head today for sure! LOL a good sneeze and a stick of butter! you guys crack me up. Good to know about the burgers freezing well too! And I agree…I can't believe my dad loved the burgers too…and he is soooo not a turkey burger fan…he loves his steak. For the Yogurt Ice cream…..this was our first time making it. So this time we directly dumped it from the containers into the maker, and didn't add anything to it. I might try and play around with adding a little splenda in it next time, to sweeten it up a little more (as yogurt has the tendency to take on a sour flavor). Over all…it really was good! I'll post as we try new things :) as for the sherbert/slushies….my husbands favorite is the watermelon one. My favorite is a pink grapefruit one. You squeeze juice enough for 3 cups, add one cup of splenda, blend it up…and I like to put it through a strainer (gets all the tiny little seeds out). Soooo good! Let me know if you come up with any new recipes, we are always looking for new things to try out. =)

I am going to Target to get an ice maker NOW! We are on same team and I gained a pound last week. Dang! The first week of the challenge is warm up. Last challenge I gained the first week and lost consistently after. You are doing great-just keep showing up for yourself.
