Our health starts in the gut. It is amazing that lectins (funny sticky proteins) are the major source of leaky gut, and that the gut lining is only 1 cell thick. I didn't know that gluten is a lectin, but only knew that wheat is inflammatory. I thought it was from the 100 years of hybridizing wheat over 1,000 times until our bodies don't even recognize it as the same thing.

I'd heard about night shade plants, but didn't know or remember potatoes, beans, corn, and soybeans have these lectins. Gluten (or other lectins) does go through the gut wall, and bacteria goes through with it. Our immune system goes to war with these foreign proteins.

It was fascinating that dairy products including cheese from France, Italy, and Switzerland is safe from the type of casein (A1: lectin-like protein) that is bad for us. Sheep, goat, and water buffalo have the better type (A2) of casein. Antibiotics destroy the good bacteria in our gut. Most meat and farm raised fish are fed antibiotics. I didn't know free range, organic chickens (and eggs) are fed organic corn and soybeans, and that those lectins come through to us. We are what we eat, “and” what those animals eat.

I guess there are lectins in most things but we can reduce the amount for our health. Foods highest in lectin include: nightshade vegetables, such as tomatoes, potatoes, goji berries, peppers, and eggplant. all legumes, such as lentils, beans, peanuts, and chickpeas. In tomatoes and peppers, the lectins are mainly in the skin and seeds. Peeling and removing the seeds is what people did for millennia.
