This doesn't look that great but omg delicious. Omelet with swiss cheese, mushrooms green beans and potatoes, plus my crack cous cous salad. It has spinach, feta, kalamata olives, artichoke hearts, garbanzo beans and almonds (plus cous cous, of course) in a balsamic vinaigrette. As far as know, invented it. The problem is it is so good i find it hard to stop eating. Makes a great potluck dish too. You can cram a lot of spinach in there!

Ty gals! Just looked very green and beige, lol. I have been craving spinach so bad and i got a big container of it when i went shopping on thursday. It is already gone!

I love how 3 cups of Spinach is the size of your thumb once it is steamed. Looks awesome Jen!

Is it a problem, a true problem, to have that issue with a salad? It’s it calorie dense? If you have to have a food that is a struggle to put down I’d think salad would be a good one ;). I’ve started using baby spinach for my salads. Half the time I don’t even log it because it’s very few calories. Plus it’s healthier than iceberg lettuce. AND my kids hate it so I get it all lol. Just dislike the stems they leave on. Want the leaves only!
