59Carol's Journal, 06 January 2019

Thank you so much for all of your Happy Birthday greetings! So my daughter and sister really put out quite the spread. My sister did up some nice beans and rice and mini cornbreads. My daughter made slow cooker beef short ribs that fell off the bones, shrimp and grits, baked sweet potato, collard greens (had to research to find greens similar to collards) in pork hock broth, followed by a very rich chocolate and orange cheesecake style layered parfait. Good thing I am going to eat carefully for the next week! In the pictures you can see a bit of my grand children and only half the table. There were 8 for supper. Very enjoyable evening for me. Some of you may notice the wood stove in the background -- that is where we cook our Thanksgiving and Christmas turkeys!
